Partner (me) actually had QJxxx --- xxxx Txxx so you might say my bidding was borderline insane but 6S is still very good.

I guess I'm still not convinced.

With hands like these, East would be nuts to X on just AK - AK in the red suits. He should have either 4 spades or a club void, and either way you aren't going to make it (I think).

It's just a case where I think 6 would be good except that the auction has promised freak distribution all around.

It is absolutely normal to double 5S with "just" AK AK in the red suits when partner has promised values with a free 2H bid and you don't think you are making 6H.
The easiest way to count losers is to line up the people who talk about loser count, and count them. -Kieran Dyke
