I have seen in Belgium cards with many more beers but this one is in my opinion excellent sorted.
Preempts are Aberlour's best bridge friends

I'm a big fan of Tripels.
Delerium Tremens is great, but its easy to find so I'd recommend trying something else

BTW< this looks like the type of restaurant that I'd love.
I'm quite envious...

I like distilled water. It just tastes sweeter somehow. Normal boiled water tastes flat.

Also, fruit juices of all kinds. Fresh ones, not smoothies, but say, squeezed from apples or oranges or watermelons.

Finally, drinks with some herbal or tea bent. Like Crysanthumum tea popular in SE Asia, iced green/black tea, herbal but sweetened tea.
